Super Chili Bowl, Cardinals and Snow!

A beautiful snowy weekend
for enjoying some Turkey Chili
and the game!

Also, my favourite bird
has been feeding in the back
yard.....

How did you enjoy the game?
As hard as I try and as many times
as football has been explained to me
I'm afraid I still don't get it.
I DO love, however, the getting together with
friends and enjoying some hearty food and fellowship.

So Handsome!

Look closely and see the neighbour coming in the lane with the horse and buggy on this very snowy Monday Morning.  He comes each day - twice a day - to tend to his goats in our barn!

TURKEY CHILI - one of our favourites!
Turkey Chili with Barley and Black Eyed Beans! I almost always make a double batch and freeze portions for easy supper meals....
2 tsp. vegetable oil
1 Cup chopped onion
2 cloves garlic - crushed
1 lb. ground Turkey or chicken
1 19 oz. can chopped tomatoes with juice
1 1/2 Cups chicken stock
1/4 Cup barley - I always make my measurement heaping!
1 Tbsp. chili powder
1 Tbsp. minced and seeded jalapeno pepper (optional)
2 tsp. dried basil
1 tsp. dried oregano
2 bay leaves
1 19 oz. can drained and rinsed black eyed beans (I use black beans)
2 Tbsp. Tomato Paste
Mushrooms - throw in a handful or two (required by the farmer who loves shrooms)
Corn - sometimes I add in a cup of corn
In large pot heat oil and saute the onion and garlic.  Add in the meat and fry until no longer pink (8-10 minutes). Add in the remaining ingredients - bring to a boil and then turn down the heat to simmer uncovered for at least 30 minutes or until the barley is tender.  Let it simmer even longer for a nice thick Chili.
Garnish with chopped green onions, grated cheese, sour cream and parsley.
Enjoy!

Have a great week everyone...............

  1. Love your handsome visitor! The horse and buggy is so picturesque. Chili was on our menu this weekend, too. Seems perfect for a winter football game. Don't worry about not seeing the U.S. commercials they were "so so". I wasn't impressed.

  2. Such intriguing photos each with its own story. Love both your visitors...the red coated one and the one who arrives in a horse and buggy. Not everyone can say that! The chili looks wonderfully delicious. I so happen to have all the ingredients; however, a certain someone is too fussy for words. Wonder if I could justify making this for myself?

  4. I don't see the cardinals around here that I spot in my parents yard. I may need to lure them with some seed :) We had chili last night, too, and I finally took notes and will share my recipe soon. Yours looks great with the addition of barley and corn!

  6. I love the Cardinal as well, we always have a few in the yard....not happy I took down the cedar hedging though.....they loved it! I have to refill the feeders today. I will be careful and try not to fall off the ladder but at least we have lots of the fluffy stuff to land on :). Had lots of chili nights growing up....child "number 1" doesn't like meals that are "mixed" together.....but child "number 2" and I do and we keep working on "number 1"! Your chili looks great, I will give it a try next time. Nan

  7. i love your snow day and what a perfect recipe for a winter day. Really, you did not decide to photo shop that bird? I love the horse and buggy in the bag. A perfect back drop for this photo. I missed the Super Bowl...I was with my super hero celebrating the Tenors instead.

  10. I can attest to the tastiness of the chili since we were fortunate to have some with the farmer and his wife before Christmas!
