While The Zucchini Grew ...

... we were frolicking in the
gardens and the streets of Boston!

The gardens!
The Streets and Buildings!
Fun Bronze Installations!

We were reminded
of that terrible
event!

With the actual
"Finish" line, still
painted on the street......

We are back at the homestead
and the Zucchini ..... well it didn't waste
any time growing.

These were just babies 5 days ago!

Well, I guess I know what I'll be doing
tomorrow ..... zucchini relishing.

Till next time ....... what do you do with bushels of zucchini?  What are your favourite zucchini recipes?

  1. I've never had bushels, but I'll be grating some for zucchini muffins and cake, and I'll be grilling a couple of slices with dinner tonight.
I love those bronze ducks in Boston!

  8. I love "Zippy Zuchini" It's Judy's recipe from way back when we were the 'young uns'
We both went to a microwave class and this is still one of my favorite recipes. It's in the MGCC blog. Have fun making relish.

    1. Thanks Marg! I'll be checking out that recipe. I've also warned my friends and family that a zucchini or two might show up on their front steps or the back stoop so BEWARE! So far I've made 3 deposits :).

  10. Oh, I love zucchini relish...and try it in chocolate cake. While you pull out zucchini recipes I'm pulling out apricot and transparent apple recipes. Yeah summer bounty!

  11. Oh those pictures of Boston look so inviting. So great you could sneak away from your garden to see the sites.
We are home from camping for one night, filling our truck with grands and heading back to the land of no wifi! This morning I'm out to look at what my garden has been doing in my absence. I think I am afraid to look since no canning will happen here whether it needs it or not!

  12. Love Boston. Pretty cool to see the finish line is still there. Zucchini…and more zucchini…I shred mine into 1 cup and 2 cup packages for winter baking. But during zucchini season…zucchini pancakes, BBQ grilled zucchini (3/4" thick slices dabbed with sesame oil and fresh grated ginger), in shish-ke-babs, grated into salads…and always the good old reliable chocolate zucchini cake. At this time of year…whenever I bake something (cookies or cakes or muffins) the kids always ask, "is there zucchini in this?"

  14. I saw a recipe for zucchini chips, oven baked with just a dab of olive oil and seasonings. They looked yummy and decidedly low calorie...
