Down the Country Concession

Our bean field looks amazing this year! Now we just need some good heat units for it to mature.

The garden lettuce has exploded - my favourite salad for lunch!

Not quite my momma's lettuce salad:

Mom's garden always had a row or two of lettuce and was served at almost every meal.
She kept it simple and delicious with some diced onion, minced borage leaf and 
a cream dressing.

I still love the cream dressing (approx. recipe):
1 Tbsp. sugar
1/2 tsp. salt
several grinds of black pepper
1/4 Cup whipping cream
2-3 Tbsp. white vinegar
1 borage leaf - minced
1 or 2 slices of sweet onion - chopped

I piled on the extras today for lunch and it was so delicious:
1/2 tomato - chunked
1/3 yellow zucchini - chunked
2 Tbsp. Hemp seed sprinkled on top
several sprigs of dill - minced
2 celery sticks with celery leaves - chopped

I should be eating this for breakfast, lunch and dinner according to the abundance 
in my garden!

  1. What a nice walk. Glad you felt up to it. I would love to have a good scoop of that yummy looking salad right about now! The Leis home is very pretty!

  2. That salad looks good enough to have at breakfast, lunch and dinner! Love the family farmhouse! Your countryside is looking beautiful...lush and green. Now, if we could just trade you some heat units for some water, we'd all be happy. We are desperately in need of rain over here.

  3. That dressing is very close to what my mom used to make. I think she opted for mayo instead of whipping cream. They used what they had on hand, right? There is something about just using what we have and not filling the fridge with a lot of bottles. I like that. Your fresh garden produce sounds so good.

  4. Hmmm...love salad with all the garden produce coming in. Have yet to see a ripe, local tomato, but am looking forward to it. All the best with the walking.

Hope for the Season

  First Snow! November 14-16 held some "bench visits" with the Leis family, to commemorate that day/week 3 years ago! We miss him ...
